Far from a “varietal” expression that characterizes the grape variety, and only the grape variety, reducing the wine to the choice of the grape.
The complexity linked to the terroir requires the search, as for reds, for a real maturity pushed to its optimum; which means producing powerful, rich wines, proud of their South West origin.
And so much the worse for those who still connect the AOC to an analytical and technological “typicity” far removed from the terroir!
