Wines

“Wine is an alcoholic beverage made from the natural and spontaneous fermentation of grapes”.

100% grape juice; that is the definition of the wine we use. Strictly speaking, it does not tolerate any intervention or additives.

Indigenous yeasts, little or no sulfur, no inputs and the minimum number of interventions: this is our credo.

The possible sulfur content should be kept to a minimum, just before bottling.

As far as possible, no fining, no filtration, limited racking to avoid premature “wear and tear” of the wines and long maturing periods for a “natural” stability.

FRUIT

Cabernet Merlot Malbec

``FRUIT`` is obviously what we are looking for in this cuvée... But make no mistake about it: it's not a wine for thirst! It is a search for the essential, to delight the senses.

FLEUR

sauvignon blanc / gris sémillon

``FLEUR`` is a blend of three grape varieties (Sauvignon blanc, Sauvignon gris and Sémillon) fermented and matured on lees in stainless steel vats exclusively to avoid any maturing artifice.

PARCEL SELECTIONS

The “P U R E” range is the result of a reflection and work on the authenticity of the wine: how to express the area in all its personality, without any compromise?

– Parcel selection : Isolating a homogeneous parcel, planted with a single grape variety, highlights the influence of the terroir on the expression of the grape variety. The grape is then only a support, a pretext for the expression of the place in the vintage: uniqueness of place, uniqueness of time.

No intrusion : It seems obvious that if we are looking for a “P U R E” expression of the place, we cannot tolerate any exogenous input. Not even a little sulfur! The “P U R E” range is therefore “sulfite-free”.

“Transparent” maturing : what is the point of making a wine that is the “P U R E” expression of a place, if it is to mask it with an exogenous supply of woody essence?

We have chosen barrel ageing and it is with the best in Europe that we choose to work: Taransaud in France and Stockinger in Austria in volumes of 12 and 18 hectolitres.

The result is wines with a unique personality, often strong and assertive, without equivalence elsewhere. The best tasters will sometimes lose their usual reference points as the grape variety is sometimes “transparent” to the benefit of the identity of the place.
Quantities are limited. Bottled in Burgundy style bottles.
