“ECORCE” is an exceptional wine since its birth in 2004, on very old Sauvignon blanc vines harvested in over-ripe conditions. At the time we called it “ACACIA“. Since then the plots have changed but the style remains!
Yields are very low: 10 to 15hl/ha! Several manual selections are often necessary to harvest only the concentrated grapes but not botrytised!
Then the must ferments in 400-litre barrels where it remains on the lees until the fermentation stops completely. It can take up to two years depending on the vintage….
Goes well with white meats, spicy dishes, exotic cuisine… but especially not with oysters as recommended by the AOC!
